Green Giant Salad


Green Giant Salad

Ingredients 6 servings 12 servings
Granny Smith apple, sliced 1 & 1/2 3
Lemon juice 1 Tbsp 2 Tbsp
Mixed lettuce greens 2 cups 4 cups
Sunflower seeds, unsalted  2 Tbsp 1/4 cup
Raisins (optional) 1/4 cup 1/2 cup
Raspberry vinaigrette dressing, low-fat 1/4 cup 1/2 cup
Walnuts, chopped (optional) 2 Tbsp 1/4 cup

Sprinkle lemon juice on the apple slices.


Mix the lettuce, apples, sunflower seeds, raisins (optional) and walnuts (optional) in a bowl. 


Toss with raspberry vinaigrette dressing to coat.  


We served Green Giant Salad with Cheesy Spaghetti Bake, grapes and milk for a balanced meal.


Food for Thought: Mixing fruits and vegetables gives salads a sweeter taste and more variety than veggies alone. Try adding more fruits or vegetables, if you have them, to add color and flavor.
