Sweet potato fries, cooked and hot | 4 cups | 8 cups |
Brown Sugar | 2 Tbsp | 4 Tbsp |
Cinnamon | 1/2 tsp | 1 tsp |
Salt | 1 tsp | 2 tsp |
Cut sweet potatoes into strips. (I used this potato cutter, but you can easily use a knife.)
Bake the potato strips at 350 degrees for 20-30 minutes. Halfway through baking, flip the fries. You will know when they are done when a fork can easily pierce one of the strips.
While the strips are cooking, whisk together brown sugar, cinnamon and salt.
Place hot sweet potato strips in a large mixing bowl. Sprinkle half of the brown sugar seasoning over top. Toss. Top with remaining seasoning, tossing again.
Serve immediately.
Food for Thought: Sweet potatoes have lots of nutrients for growing kids such as Vitamin A and Vitamin C. Baking them in strips make them look like French Fries, but without the fat. These can be eaten as a snack or a side.
