Cornbread Recipe

Cornbread
1 serving = 1 bread

Ingredients 6 servings
(We will double or triple this recipe.)
Yellow Corn Meal 3/4 cup
Flour, enriched or whole grain 3/4 cup
Baking Powder 1 Tbsp
Milk 3/4 cup
Eggs, medium 1
Margarine 1/4 cup

 

1. Combine dry ingredients.



2. Add milk, eggs and margarine.


3. Beat until smooth - about 1 minute.


4. Preheat baking dish in oven at 425 degrees for 15 minutes.


6. Pour batter into preheated skillet and bake at 425 degrees for 15-20 minutes.



7. Cut into portions equal to number of children to be served
.



We served the Cornbread with chili, baked apples and milk for a nutritious lunch.


Baked Apples Recipe

Baked Apples
1/4 cup (or 1/2 apple) = 1/2 fruit/vegetable
           
Ingredients 6 servings
(We will double or triple this recipe.)
Margarine 1 & 1/2 Tbsp
Apples, fresh, small 3
Water 1/4 cup
Sugar 1/4 cup
Cinnamon 1 tsp


1. Preheat oven to 350 degrees.


2. Use pan with 1" sides. Grease pan with margarine.


3. Wash and slice apples 1/4" thick, removing core and seeds.



4. Put water and apples in pan.


5. Sprinkle with sugar and cinnamon.


6. Bake for 45 minutes.  



Notes: We served the Baked Apples with chili, cornbread and milk for a nutritious lunch.


Chili Recipe

Chili
3/4 cup = 1 meat; 1/2 fruit/vegetable
           
Ingredients 6 servings
(We will double or triple this recipe.)
Ground Beef 1/2 pound
Light Kidney Beans 1 can (16-ounce can)
Tomatoes, canned 1 can (16-ounce can)
Chili Powder 1 tsp
Spice Mix 1 Tbsp
Garlic Powder 1 tsp
Onion Powder 1 tsp
 

1. Brown ground beef in iron skillet and drain fat.


2. Chop tomatoes in a blender.


3. Put meat and all remaining ingredients into a large pot.

  

4. Heat to boiling.


5. Turn down heat. Simmer for 2 hours - longer, if possible.



We served the Chili with baked apples, cornbread and milk for a nutritious lunch.


Egg Puff Recipe

Egg Puff
1 egg puff = 1/2 meat (optional)
           
Ingredients 6 servings
(We will double or triple this recipe.)
Eggs, medium 2
Biscuit Mix 1/4 cup
Cheddar Cheese 2 oz
Milk 5 oz
Dry Mustard 1/4 tsp
Cooking Spray


1. Preheat oven to 350 degrees.

 
2. Grease muffin pans (one muffin per child) with cooking spray.


3. Grate cheese.

4. Mix all ingredients with hand mixer.



5. Pour 1/4 cup mixture into each muffin container.


6. Bake about 20 minutes. Centers should be firm.


7. Let sit for 5 minutes before serving.




Note: Egg puff can be served on a toasted junior size hamburger bun, English muffin or biscuit to resemble a fast food-type egg sandwich. You could also substitute the bun, muffin or biscuit for the toast in this menu.


We served the Egg Puff with toast, mandarin oranges and milk for a nutritious breakfast.
